Most cardamom sold in India has been irradiated (exposed to radiation to extend shelf life and kill bacteria), treated with chemical preservatives, or stored for extended periods in conditions that degrade the volatile oils responsible for its aroma. Our organic cardamom is grown without synthetic chemicals and processed without irradiation , which means the cineole content (the primary aromatic compound) is meaningfully higher than in standard commercial cardamom.

The difference is immediately apparent when you crush a pod , the release of aroma is intense, fresh, and unmistakably cardamom rather than the faint ghost of it that you get from old, irradiated stock.

What Makes Organic Cardamom Better

How to Use Kinnaur Organic Cardamom

In Chai , The Cornerstone Use

Lightly bruise a pod with the flat of a knife to crack it open (don't split it fully , just expose the seeds slightly). Add to cold water with tea leaves and bring to a boil. Remove before serving. One pod per cup is typically sufficient , the flavour is concentrated.

In Rice and Biryani

Whole pods tempered in ghee at the start of a biryani or pulao base , the classic north Indian technique. Remove before eating.

In Desserts and Baking

  • Kheer and phirni: Ground cardamom seeds (from approximately 4–5 pods) per litre of milk.
  • Mithai and laddoos: Ground cardamom is nearly always present in traditional Indian sweets , besan laddoo, peda, barfi.
  • Chai masala blend: Cardamom, ginger, cinnamon, clove, and black pepper , the classic blend where cardamom is the dominant note.

As a Breath Freshener (Traditional Use)

Chewing a whole cardamom pod after meals is a traditional practice in South Asian cultures , the aromatic oils have a well-documented breath-freshening effect.
