But the hazelnuts in those products are almost never from India. India’s domestic hazelnut production is limited, concentrated in specific Himalayan valleys – including Kinnaur. A small handful (20–25g) of hazelnuts makes an ideal between-meal snack – satiating, nutritionally dense, and portable. Toast lightly in a dry pan first for 3–4 minutes to deepen the flavour and loosen the papery inner skin, which can then be rubbed off with a clean cloth.
In Indian and fusion cooking
- Hazelnut chutney: Roasted hazelnuts blended with fresh coriander, green chilli, garlic, and lemon juice. A richer alternative to the standard peanut or coconut chutney.
- In kormas and gravies: Ground hazelnuts add a creamy, mildly sweet depth to nut-based gravies – works particularly well in shahi korma or white-gravy dishes.
